Here is a festive recipe for gingerbread men. Hope you enjoy.

Ingredients
350g plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g butter
175g light soft brown sugar
1 egg
4tbsp golden syrup
Writing icing and cake decorations for decoration
Method
1) Sift together the dry ingredients (excluding the sugar) and pour into a food processor.
2) Add the butter and blend until the mix resembles breadcrumbs. At this stage, stir in the sugar.
3) Lightly beat the egg and golden syrup together and then add into the food processor. Pulse until the mix clumps together. Tip out the dough and briefly kneed until smooth.
4) Wrap in clingfilm and leave to chill in the fridge for 15 minutes.
5) Preheat the oven to 180C and line two baking trays with greaseproof paper.
6) Roll out the dough onto a lightly floured surface and cut into gingerbread men shapes. PLace on the tray with gaps between them.
7) Bake for 12-15 minutes (or until golden) and then leave on the tray to cool for 10 minutes, befire moving them onto a cooling rack to complete cooling.
8) Once fully cool, decorate and enjoy.

Fairy Cakes
Hey Internet Friends,
I thought I'd share with you one of my favourite recipes. It's so quick and easy to make and tastes divine.

Ingredients:
100g margarine
100g caster sugar
2 medium eggs
100g self raising flour
Method:
1) Heat oven to 180 degrees C and lay out cupcake cases on a baking tray.
2) Cream margarine and sugar till light and fluffy.
3) Beat in the eggs one at a time. Add a small amount of flour with each egg.
4) Fold in the remaining flour.
5) Place equal amounts of cake mix into the cupcake cases and bake for 10-20 minutes (or until golden and fully cooked right through).

Shortbread Recipe
Hey Internet Friends,
Today I thought I'd share with you one of my favourite recipes, shortbread! So simple but so delicious.
Ingredients:
- 250g plain flour
- 75g caster sugar
- 175 g butter
Method:
1) Heat oven to 160 degrees C and grease a baking tray.
2) Mix flour and sugar in a bowl and rub in the butter.
3) Knead well to form a smooth paste.
4) Take small sections and roll into lots of small balls.
5) Place the balls of dough onto the tray and push down on top of each one with the base of the prongs to create 4 lines going across.
6) Bake in the oven for 15-20 minutes.

Cookie Cake Recipe

Today I thought I'd share with you one of my absolute favourite recipes. Now, this is something I make a lot because it's so delicious. It even works well as a birthday cake...COOKIE CAKE!!!
Ingredients:
Today I thought I'd share with you one of my absolute favourite recipes. Now, this is something I make a lot because it's so delicious. It even works well as a birthday cake...COOKIE CAKE!!!
Ingredients:
- 110g dark brown soft sugar
- 4tbsp caster sugar
- 110g softened butter
- 1tsp vanilla extract
- 1 egg
- 150g plain flour
- 1/2 tsp bicarbonate of soda
- 175g plain chocolate chips (or Smarties/M&M's)
Method:
- Preheat the oven to 180 degrees.
- Line the base of a round tin (about 10-12 inches wide) with greaseproof paper.
- Cream together dark sugar, caster sugar and butter until smooth.
- Mix in the egg and vanilla extract.
- Combine the flour with bicarbonate of soda and stir into the mix. The dough should be fairly stiff.
- Mix in the chocolate chips.
- Spread or pat the dough onto the tin and bake for 15-25 minutes, or until golden brown.
I hope you enjoy trying this recipe and find it as easy to make and as yummy as I do.

Brownie Recipe
Hi Internet Friends,
Today I thought I'd post a recipe which was shown to me by my lovely best friend (check out her blog here).
Ingredients:
Method:
1) Heat the oven to 180 degrees C/Fan 160 degrees C/gas mark 4 and grease and line a tin.
2) Place the butter, caster sugar, brown sugar, chocolate and golden syrup in a pan and melt gently on a low heat until smooth and lump free.
3) Remove the pan from the heat
4) Break the eggs into a bowl and whisk with a fork until light and frothy.
5) Add the eggs, vanilla extract, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly.
6) Put the mix into the tin and bake for 25-30 minutes.
The brownies are absolutely amazing and are fairly simple to make. Pair them with ice-cream while they're hot or just enjoy them as they are.
